Introducing Spring Special "The Carnival" - our seasonal market special! This spring-summer curry features a unique blend of mango and rose water, bringing fresh, vibrant flavours to the table. Inspired by the timing of its launch - just before the spring racing carnival - we've named it "The Carnival."

A traditional Madras-style curry infused with vibrant flavours of curry leaves, mustard seeds, turmeric, cumin, coriander, fennel, and warming paprika. Rich, aromatic, and full of depth, this South Indian-inspired curry delivers a beautiful balance of spice and fragrance, perfect with chicken, beef, lamb, or vegetables.

A vibrant marriage of Thai Red and Jungle curries, layered with aromatic herbs, warming spices, and a touch of jackfruit for added depth and texture. Macelam is a unique, invented name created for a curry at The Flying Pigeon. It’s a thoughtful play on words that reflects both place and philosophy:
Mace — short for Macedon, the region where the curry is handcrafted
Lam — drawn from Salam (سلام), the Arabic word for peace.
Together, Macelam represents a Massaman-inspired curry with a twist: an original recipe developed in Macedon that’s made to suit a variety of dietary needs, and embodies the spirit of peaceful, inclusive eating.
Onya Nyonya
Good on ya, Nyonya people, for creating an incredible dish - Penang / Panang Curry
Our peanut-free take on this classic curry swaps peanuts for tahini, keeping that creamy, rich texture while adding a hint of tang that makes it sing. It’s flavourful, tasty, and full of character — just like its name. We love giving our curries a bit of cheek (and a chuckle), and Onya Nyonya is no exception! Bougan Josh 🌸
Meet our Bougan Josh — our playful take on the classic Indian Rogan Josh, the name was inspired by the vibrant Bougainvillea flower, might give you a giggle, but the curry means business! This house-made curry is fragrant and beautifully complex, layered with warm spices and gentle heat — never fiery, just perfectly balanced.
